Recipe Swap Tuesday: Pasta

Fettuccine Alfredo with Bacon


~ 1 package fettucini
~ 8 slices bacon, chopped
~ 1 tsp. minced garlic
~ 1 tbsp. all purpose flour
~ 1 c low fat milk
~ 2/3 c grated parmigiano-reggiano cheese
~ 1/2 tsp salt
~ 2 tbsp chopped fresh parsely
~ 1/2 tsp fresh ground pepper


1. Cook pasta according to package. reserve about 1/4 c cooking liquid
2. While pasta is cooking, cook bacon in a large non-stick skillet over medium-high heat until crisp, remove bacon, reserve drippings
3. Add garlic to drippings in pan, sautee for 1 minute stirring constantly.
4. Sprinkle flour over garlic, cook 30 seconds stirring constatnly
5. Gradually stir in milk, cook 2 minutes or until bubbly and slightly thick
6. Reduce heat to low, gradually add cheese stirring constantly until cheese melts. Add salt and pepper and reserved cooking liquid
7. Add pasta to pan and stir well, sprinkle with bacon, parsley and pepper
