RecipeTuesday

I got this recipe from a fellow mommy in a facebook group I'm in. I tweaked it to my own, and it's easy to tweak! You can add all kinds of veggie's to this and it wont alter much of the recipe!

Stuffed Pepper Casserole

1 lb. ground beef
2 green peppers, chopped
1-2  red peppers, chopped
1 zucchini, chopped 
1 small onion, chopped
4 cloves garlic, chopped
1 tsp. garlic powder
1 tsp. pepper
1/2 - 1 tsp. salt
2 1/2 c. cooked rice (cook however you want. I use white rice, water, butter, salt & pepper, garlic powder)
2 jars spaghetti sauce
3/4 c. cheddar cheese, shredded
3/4 c. mozzarella cheese, shredded
1/4 c. paremsan cheese, shredded


*I mix the cheeses together


1. Preheat oven to 425*
2. Start your rice



3. Cook hamburger for about 1 minute, then add garlic powder, salt & pepper, cook another minute or two
4. Add veggies, cook until hamburger is done
5. Add cooked rice



6. In a 9x13 pan, place a layer of spaghetti sauce, hamburger mixture, cheese. Repeat until cheese layer is on top



7. Cook for 20 minutes until cheese is hot & bubbly


A simple salad goes nicely with this. You're getting veggies, meat, and a starch in your casserole so you don't need to go over the top with sides!
